After the autumn’s mino , here come the Winter time, the birthday celebration for Christine! Yep, this is another throwback. LOL. . I always love winter fish due to the fattiness and creaminess of the neta.
Winter’s mino for the day
Appetiser – Steamed Oyster with Spinach
Ahhhhh, so creamy and flavoured with sea essence! So delicious!
Kue – Japanese Goroupa
With dried kelp and topped with shiokara (marinated fish innards)
Hirame – Flounder Fish
Aged 1 wk for the umaminess
Shima aji – Striped Jack
Snow Crab
Mixed with miso for a more amai flavour
Tubugai – Shellfish
They said super sweet!
Since I was worrying I might get allergy from shellfish, I requested for a change and chef changed mine to Zuke Maguro
Buri – adult Yellowtail
It was so clean and great.
And… I lost track on this. Hmmm…
