Sighhh, I really wish to share pretty photos that I have taken over the weekend along the my recipe with you guys. Sadly (which I really wanted to cry so badly now)… all my photos in the SD card corrupted. All the beautiful plating and the food styling (though not the PRO type) i put lots of efforts in were ALL GONE. Wish I manage to recover the photos and share it up again. But now, please forgive me for the low quality of photos here taken with phone.

English Afternoon Tea a la Home Style

My hero ingredients in this afternoon tea recipe from NZ Food Connection are Rockit apples, Tatua Whipping Cream, Farmer’s Mill Buttermilk Scone Mix and Anchor Pure New Zealand Butter.

For Homemade Apple Jam
What you need are:
500g apples (with the variety of apples – Royal Gala, Granny Smith & Rockit Apples – added last to preserve the crunchy texture)
80g castor sugar
1 vanilla bean
1 cinnamon stick
1tbsp fresh lemon juice

What you need to do:
1. Boil the sugar and 1 tbsp of water in a pot over medium high heat and stir the sugar until dissolve and allow it to turn into amber colour.
2. Then, add apples, vanilla bean (slice into half and scrap out the seeds) and cinnamon stick. Stir to coat.
3. Reduce heat to medium and stir once a while and allow the apple to cook until they are softened and became translucent.
4. Finally, add in lemon juice and stir them up. If you love mushy texture, you can actually break the apple with wooden spoon. But I love more texture on the fruit, so I broke only partly and kept most chunky bits in.
5. Discard the vanilla bean and they are ready to serve.

For Scones:
What you need are:
1 box of Farmer’s Mill Buttermilk Scone Mix
1 cup of water

What you need to do:
1. Gently and lightly mix the buttermilk scone mix with water. Do not over mix and overbeat or else the scone will become as hard as rock.
2. Line the tray with baking paper.
3. Weigh the dough 50g each and place on the lined baking paper.
4. Brush the scone dough with egg yolk.
5. Allow the scone dough to rest for about 15 mins before sending them into the oven
6. Bake at 180 degree for about 15 minutes or until cook (or you can just follow the whole instruction on the box).

Buttermilk Apple Scones
Buttermilk Plain Scones
Anchor Pure New Zealand Butter
Whipped up Tatua’s Whipping Cream

I also made some apple scone with the apple jam I made earlier. The outcome was awesome!!! Just combine the chunky apple jam into the buttermilk scone mix, lightly mix and then bake. Love every bite were in juicy madness along with the soft fluffy hot piping scone. Never forget the fragrant butter and creamy whipping cream to go along with the fluffy scones. This buttermilk scone mix is really handy. you can simply produce some amazing scone with this premix. You can also make savoury scones by adding cheese or sun-dried tomatoes or chopped spinach into the scone mix.
