I am a big fan of egg noodles and have always wanted to try out their bamboo noodles after reading numerous good reviews about it. Till today, I get a try. I must say, yes, I do love it, The Noodles!!!

Nippy Noodles Restaurant is the name for the famous bamboo noodles or 竹升面. Tucked in one end in the entrepreneur park, to locate a parking during lunch hour is a forever most difficult task in the world. Nippy’s noodles are made with the traditional method, using bamboo and manual operation. Even their wanton wrappers are bamboo rod too!

Check out how they make the noodles so springy, or I shall call it crunchy too!!!

1, the use of premium wheat flour and omega 3 eggs in forming the egg noodles

2, bamboo pole is used to bounce in order to distribute equal pressure on the dough to develop the right structure, texture and pliability for a tooth-y and springy bite

3, the chef will cook the egg noodles in boiling water till al dente.

4, the noodles are then rinsed and immersed in tap water, blanched again in hot water for the gentlest bite.

5, finally tossed with premium soy sauce and served with toppings.

Choose your noodles between flat or thin noodles, dried or soup version. I suggest you to take the dried version with thin noodles if you fancy the very springy texture of the noodles. And they do have the golden five minutes moment to enjoy the springy eggy noodles. Seriously, can one finish a bowl of noodles within five minutes?! Obviously I can’t make it! But well, it was still good after the five minutes, just slightly not-that-very-springy and crunchy like once served.

Minced Pork and Prawn Bamboo Dumpling Soup 猪肉鲜虾饺子汤 (Rm 7 for small portion came with 5 pieces of dumpling)

Their Roast Herbs Pork and Liver Sausage, BBQ Pork and Crispy Pork have got nothing to shout out about. These items weren’t charred and flavourful enough to my liking. However, their dumplings were pretty good. Stuffed with ingredients and the soup was pretty decent too. If I were to revisit again, my order must be a plain bowl of bamboo noodles along and the dumplings.
