Year of “Rooster” Lo Sang 金雞凤鳴 (大紅凤凰撈生)
A very interesting and unique lo sang where the you will not see the usual ingredients like shredded carrots or coloured crackers pieces in it. Fruits such as jackfruit, dragonfruit, strawberries, turnip are used. Whereas for the usual raw fish topping, Chef Lam omitted it and made a twist, added in the year’s element – chicken; he introduced the sweet and sour crispy chicken into his special lo sang. Together with toasted sesame and fragrant ground peanuts, plum sauce and olive oil, it all made up a very wholesome and refreshing dish.
